Instant Pot Sausage Gumbo Soup

Ingredients
  • 1 Tbsp. oil
  • 1 medium onion, chopped
  • 1 16 oz package smoked sausage, cut into ½ inch slices
  • 2 cloves garlic or a Tbsp minced garlic
  • 6 cups chicken broth
  • 1 14.5 oz can diced tomatoes
  • 8 ounces frozen vegetable gumbo mix
  • 12 ounces farfalle pasta (bowtie)
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes
  • salt and pepper to taste
  • 1 tsp Cajun seasoning (optional)
Steps
  1. Saute onion in the oil for 2 minutes, then add sausage and saute another 2 minutes.  Add garlic and saute another minute, then switch IP off.
  2. Add everything else and set IP to manual for 6 minutes.  Quick release.
Notes
  • You can change this around as you'd like - I added more broth and an extra can of diced tomatoes because I wanted more broth.
