Alton Browns Christmas Soup
Ingredients
  • 1 lb kielbasa, sliced ¼ inch thick on the bias
  • 8 cloves of garlic, minced
  • 1 lb red kidney beans, soaked at least 4 hours or overnight
  • 2 qt chicken broth
  • 1 lb red potatoes, cut in ½ inch cubes
  • 6 oz fresh kale, rinced and broken into 1 inch pieces
  • ¼ cup red wine vinegar
  • ½ t fresh ground black papper
Steps
  1. Brown kielbasa in dutch oven. Cook on medium until fat is rendered, about 15 minutes.
  2. Cook garlic in fat about 1 to 2 minutes, stirring constantly. Add beans and broth and cook covered for 45 minutes. After 45 minutes add potatoes and cook an additional 15 minutes, stirring occasionally.
  3. Toss kale in the pot, cover and cook 10 minutes until tender but not mushy.
  4. Sprinkle with vinegar and pepper and stir. Return kielbasa to pot and cook until heated through. Correct seasoning and serve.
