Tom Kerridge's Slow Cooked Beef Brisket
Ingredients
  • 2 tbsp vegetable oil
  • 2.5kg piece of beef brisket, cut into 6 equal size pieces
  • 2 large onions, peeled and each half cut into quarters
  • 6 garlic cloves, peeled and halved
  • 1 tsp cumin seeds
  • 2 tsp hot smoked paprika
  • 3 dried guajillo chillies, stems and seeds removed
  • 2 dried ancho chillies, stems and seeds removed
  • 6 dried chipotle chillies, stems and seeds removed
  • 400g can chopped tomatoes
  • 1 litre beef stock
  • 2 tsp Mexican oregano
  • Salt and freshly ground black pepper
