Poached Apricots with Pistachio and Amaretti Mascarpone
Ingredients

  • 7 tbsp/105ml Sauternes, or other light dessert wine
  • 2½ tbsp water
  • 1 lime: finely shave the peel to get 3 strips, then juice to get 1 tbsp
  • ¼ tsp vanilla bean paste or vanilla extract
  • ¼ cup plus 1 tbsp/60g superfine sugar
  • 6 medium apricots, halved and pitted (9¾ oz/280g)
  • 1 tsp orange blossom water
  • ⅔ cups/80g pistachios
  • 3 oz/80g amaretti cookies (the hard variety), roughly crumbled
  • 2 tbsp superfine sugar
  • ½ cup plus 1 tbsp/120g mascarpone
  • ½ cup/120ml heavy cream
  • 1 tsp finely grated lime zest
