  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons canola oil, divided
  • 2 cups unsalted beef stock
  • 1 cup water
  • 2 tablespoons tomato paste
  • 12 ounces Yukon gold potatoes cut into 1-inch pieces (about 2 medium)
  • 1 ½ cups carrots, peeled and cut into ½-inch pieces (about 3 medium)
  • 1 ½ cups chopped yellow onion (about 1 medium)
  • 1 cup (½-inch) diced celery (about 3 ribs)
  • 4 large garlic cloves, chopped (about 2 Tbsp.)
  • 1 cup frozen green peas
  • 2 tablespoons chopped parsley
