Mediterranean Three Bean Salad
Ingredients

  • 1 cup grape tomatoes (quartered)
  • ¼ cup sweet pepper (any color), diced
  • 1 ½ cups cucumber, chopped
  • ¾ cup Kalamata olives, pitted and halved
  • 1 cup crumbled feta cheese
  • subheading: FOR THE DRESSING:
  • 3 tablespoons lemon juice (approximately one lemon)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • ½ teaspoon Himalayan pink salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried dill
  • 1 teaspoon oregano
  • 1 teaspoon date nectar
