Carrot Cake Chaffle

Ingredients
  • 1 Egg
  • 2  TBSP cream cheese, softened
  • ¼ TSP Cinnamon
  • ⅛ TSP Ground Ginger
  • ⅛ TSP Nutmeg
  • 1 TBSP Finely Shredded Carrot
  • 1 TBSP Swerve Brown Sugar
  • 1 TBSP Chopped Pecans
  •  
  • 1 Cream Cheese Frosting Recipe *See Notes
Steps
  1. Preheat your mini waffle iron.
  2. Soften cream cheese and mix all ingredients until a smooth batter forms.
  3. Pour batter onto your mini waffle iron and cook for four minutes.
  4. *The last chaffle might only take three depending on how well you do at dividing. This recipe makes three!
Notes
  • The frosting recipe is from Low Carb Inspirations. I made the Oreo Chaffle and loved the frosting! The only thing I did differently was to use Swerve Confectioners instead of the monk fruit.
  • Also, I stack these and layer the frosting between each and on top. Then sprinkle with chopped pecans. I then cut it in half because it's too rich for me.
