Ingredients
- 1 Egg
- 2 TBSP cream cheese, softened
- ¼ TSP Cinnamon
- ⅛ TSP Ground Ginger
- ⅛ TSP Nutmeg
- 1 TBSP Finely Shredded Carrot
- 1 TBSP Swerve Brown Sugar
- 1 TBSP Chopped Pecans
- 1 Cream Cheese Frosting Recipe *See Notes
Steps
- Preheat your mini waffle iron.
- Soften cream cheese and mix all ingredients until a smooth batter forms.
- Pour batter onto your mini waffle iron and cook for four minutes.
- *The last chaffle might only take three depending on how well you do at dividing. This recipe makes three!
Notes
- The frosting recipe is from Low Carb Inspirations. I made the Oreo Chaffle and loved the frosting! The only thing I did differently was to use Swerve Confectioners instead of the monk fruit.
- Also, I stack these and layer the frosting between each and on top. Then sprinkle with chopped pecans. I then cut it in half because it's too rich for me.
