Cranberry Banana Loaf - Company's Coming

Ingredients
  • ¼ cup butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • ¾ cup mashed very ripe bananas ( 2 or 3)
  • 1 cup chopped cranberries, fresh or frozen
  • 1 ½ cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
Steps
  1. Preheat oven 350°F.
  2. Put butter, sugar and 1 egg in mixing bowl. Beat until smooth. Beat in second egg. Stir in banana and cranberries.
  3. Using another bowl put flour, baking powder, soda, salt and cinnamon. Stir together well. Add all at once to banana mixture. Stir only to moisten.
  4. Scrape into greased 9 x 5 x 3 inch loaf pan.
  5. Bake for 1 hour until it tests done. Let stand 10 minutes before removing from pan to cake rack to cool.
