Christmas Apple Bread (Fournier Original Recipe)
Ingredients
  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 Tbl buttermilk (or add 1 tsp lemon juice to ⅓ cup milk - measure out 2

  • 1 tsp vanilla
  • ½ tsp cinnamon
  • 2 cups peeled, diced apples ½ cup walnuts, chopped (optional)

  • 2 Tbs butter, softened
  • 2 Tbs sugar
  • 2 Tbs flour
  • 1 tsp cinnamon
Steps
  1. Cream margarine and sugar. Add eggs. Stir in flour and salt. Dissolve soda in buttermilk. Add to batter and mix well. Stir in vanilla, cinnamon, apples and nuts.
  2. Pour into greased and floured loaf pan. Sprinkle with topping. Bake at 325 for 1 hour and 10 minutes.

  4. Combine all ingredients and chop with pastry blender or knife and fork until coarse crumbs form.
Notes
  • Can be made as muffins (makes about 18, I think?) Bake at same temp, for roughly 20 mins (start checking at 15mins)
