Black Bean Quinoa Salad
Ingredients

  • ½ cup uncooked Quinoa
  • 1 cup Water or Vegetable stock

  • 1 cup Fresh or Frozen Corn see Notes
  • 1 ½ cup Bell peppers I have used Yellow and Orange bell pepper
  • 1 cup Chopped tomatoes
  • ½ cup Onion chopped
  • 1 cup Chopped cabbage or Cucumber
  • 2 tablespoon Cilantro
  • subheading: For dressing:
  • ⅓ cup Lemon Juice
  • ¼ cup extra virgin Olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper powder
  • 1 teaspoon thyme
  • 1 clove of garlic
  • 1 tablespoon maple syrup
