Cream Cheese Stuffed Keto Bagel Bites (Bantam Bagel Copycat)

Ingredients
  • •2 cups Shredded mozzarella cheese
  • •1 cup plain cream cheese
  • •2 Tsp baking powder
  • •1 egg whisked
  • •1 cup almond flour
  • •everything but the bagel seasoning
Steps
  1. 1. Melt the mozzarella cheese and 2 Tbsp of cream cheese in the microwave. This should take 1:30-2:00 minutes, depending on your microwave. Mix the cheeses.
  2. 2. Add the egg to the cheese mixture and mix.
  3. 3. Add the almond flour and baking powder and mix thoroughly. This works in a mixer or you can knead the dough with your hands,just make sure your hands are wet - it’s easier to work with the dough.
  4. 4. Divide the mixture into 4 to 6 pieces and roll each piece into a ball.
  5. 5. Flatten each individual ball and then place a tsp of plain cream cheese in the middle.
  6. 6. Fold the dough around the ball and roll it into the cream cheese is fully enclosed with dough.
  7. 7. Repeat with the remaining dough and cream cheese.
  8. 8. Sprinkle Everything but the Bagel Seasoning over the top of the stuffed dough balls.
  9. 9. Bake for 12 to 15 minutes at 375 degrees until the stuffed bagels are a golden brown color.

Notes
  • I divided the dough again to make smaller bites.
  • When I was putting the seasoning on, I realized it wasn’t sticking to the balls. I ended up melting some butter and dipped the dough balls into the butter. That worked great.
  • I also put cinnamon and sugar on half of them for my hubby!
