Stovetop Beef Stew for Two (Dinner for Two)
Ingredients
  • ½ pound beef chuck roast, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 small onion, quartered
  • 4 garlic cloves, peeled
  • ¾ to 1 cup beef broth or stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 2 large carrots, cut into 1-inch pieces
  • 1 large potato of choice, cut into 1-inch pieces
  • 1 sprig thyme + 1 teaspoon fresh thyme leaves
  • ½ cup fresh or frozen peas
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional - see recipe)
  • 1 tablespoon water (optional - see recipe)
