End of Summer Garden Fresh Cherry Tomato Sauce with Fresh Ginger
Use up those end of summer cherry tomatoes

Servings: 2 pts to 1 qt sauce

Servings: 2 pts to 1 qt sauce
Ingredients
  • Approximately 2 lbs cherry tomatoes, stemmed and washed (no need to cut)
  • ¼ c sugar
  • Juice of 1 lime (about 2 tbsp)
  • ½ tbsp garlic (garlic paste from Trader Joes works well)
  • 2 cloves garlic, chopped
  • large pinch of salt - extra to taste
  • ground pepper to taste
  • Optional, add 1 tsp chili flakes or other heat to taste
Steps
  1. Slowly heat tomatoes in a large saucepan until juices released
  2. Use an immersion blender to blend in pan
  3. Add sugar, salt, lime juice, garlic, and ginger
  4. Bring to boil then simmer to desired thickness. Taste and adjust ingredients to taste.
