Nutted Wild Rice Salad
Ingredients
  • 1 C. Raw wild rice
  • 2 C. white rice, or more
  • 2 C. coarsely chopped pecans
  • 2 C. Yellow raisins
  • ½ C. olive oil
  • 2 tsp salt
  • grated rind of 2 oranges
  • 8 thinly sliced green onions
  • ⅔ C. fresh orange juice
  • Fresh ground pepper

Steps
  1. Cook wild and white rice separately. Drain and cool the rice. Place rice in a large bowl and add remaining ingredients. Toss altogether and adjust seasonings to taste. Let mixture stand for at least 2 hours room temp to allow flavors to develop. Serve at room temperature.
