Vegan Dumplings and Vegetable Soup

  • 2 medium-sized carrots finely chopped
  • 5 stems of green onion finely chopped
  • 1 tbsp. vegan butter
  • 1 heaped tbsp. all-purpose flour
  • 1 tsp sea salt
  • 1 tsp fresh cracked pepper
  • 1 tsp fresh thyme
  • 1 tbsp. vegetable stock paste mixed with 1 ½ cups boiling water
  • 7 cups boiling water
