  • 1 box Rigatoni (I love Barilla)
  • 2 tbsp. Olive oil
  • 1 lb. Italian sausage, casings removed
  • ½ large yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 24 oz. jar marinara sauce
  • 1 tsp. Dried basil
  • ¼ tsp. crushed red pepper
  • 1 ¼ cups ricotta cheese
  • 2 tbsp. fresh parsley, finely chopped plus more for garnish
  • 2 cups mozzarella cheese
  • 1 cup freshly grated parmesan, divided
  • Splash of red wine (about ¼ cup)
  • Salt and pepper to taste
