KALE & CASHEW PESTO PASTA
Ingredients
  • 100g penne (or gluten free)
  • 1 zucchini halved & thinly sliced diagonally
  • 1 tsp olive oil
  • salt & pepper, to taste
  • subheading: Pesto:
  • 1⁄2 bunch of kale shredded
  • 3⁄4 cup (100g) cashews soaked in water overnight & drained
  • 1 bunch of fresh basil leaves picked
  • 2 garlic cloves crushed
  • 1⁄4 cup (65ml) water
