  • ½ tablespoon coarse kosher salt, plus more to taste
  • ¼ teaspoon dried Mexican oregano
  • 4 Pete and Gerry’s Organic Eggs
  • Chopped cilantro, for garnish
  • Cotija cheese, for garnish
