Cauliflower and yellow lentil curry

Ingredients
  • So simple, healthy and delicious - vegan cauliflower and lentil curry - served with a home made preserved lemon pickle
  •  
  • 1 onion, finely chopped
  • 8 cloves garlic,
  • 1 tablespoons oil
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 cups chopped tomatoes
  • 1 cups water
  • 2 tins lentils
  • 1 or more heads cauliflower, chopped into bite sized pieces
  • salt to taste
  • Preserved lemon pickles to serve
Steps
  1. Yes just fry off onions garlic and spices in a little oil then add rest and stew until cauliflower is soft. Add what you like and portions you like - use tin lentils and tomatoes for a quick meal
