One Pot Lasagna Soup with Creamy Cheese Topping
Ingredients
  • 1 Tablespoon extra virgin olive oil
  • 1 pound lean ground beef
  • 1 large yellow onion (diced)
  • 4 cloves garlic (minced)
  • 5 cups bone broth (or low-sodium chicken broth or beef broth)
  • 2 14.5 ounce cans petite diced tomatoes
  • 3 Tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¾ teaspoon fennel seeds (crushed)
  • ½ teaspoon dried thyme
  • 1 teaspoon granulated sugar
  • 8 lasagna noodles (broken into bite size pieces (6.5 oz))
  • Salt and freshly ground black pepper (to taste)

  • ¾ cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 8 ounces ricotta cheese
  • 2 Tablespoons chopped fresh parsley (plus more for garnish)
