IP Anko (Red Bean Paste)
Ingredients
  • 1 ½ cup azuki beans (300 g)
  • 5 cups water (The ratio of azuki beans to water is 1:4; see metric measurement)
  • 1 ¼ cup sugar (To make a fine paste koshian, use 1 ¼ cup (240 g), 80% of the weight of azuki; To make a chunky paste tsubuan, use 1 ½ cup (300 g), equal weight)
  • ⅛ tsp kosher salt (Diamond Crystal; use half for table salt)
