Eggs and Red Cabbage

Ingredients
  • 1 c red cabbage, shredded finely
  • 1 tsp coconut oil
  • 2 cloves garlic, crushed or minced
  • 3 eggs
  • Chopped parsley
  • Salt and pepper
Steps
  1. Heat coconut oil in a non-stick skillet over medium heat.
  2. Add sliced cabbage and cook until,soft. You may need to add a few tablespoons water and partially cover skillet with a lid to help soften cabbage.
  3. Add garlic to cabbage and stir. Do not let garlic burn. Make sure cabbage is not sitting in water.
  4. Whisk eggs, pour over cabbage mixture and stir to scramble.
  5. Finish dish by adding some chopped parsley, salt and pepper to taste.
