Sweet Potato Hash Recipe (Vegetarian, Grain-Free, Lectin-Free)
Ingredients
  • 2 medium sweet potatoes, peeled and cubed in small pieces*
  • 2 tbsp. olive oil or avocado oil
  • 1 tsp. smoked paprika
  • ½ tsp. turmeric
  • ½ tsp. sea salt
  • ½ tsp. onion powder
  • ¼ to ½ tsp. ground black pepper
  • 2 cloves garlic, finely minced
  • 1 poblano pepper, seeded and chopped (leave out if you're strictly lectin-free)
  • Scallions, green parts only, sliced on a bias
