No Bake Peanut Butter Chocolate Chip Energy Bites Video
Ingredients
  • ½ cup natural creamy peanut butter (almond, cashew butter OR sunflower / pumpkin seed butter work as well)(heated slightly until liquid-y)
  • ¼ cup liquid honey (brown rice syrup, agave syrup or date paste will work as well)
  • ¼ cup finely shredded coconut (I used unsweetened but you can use sweetened if you prefer)**
  • 2 cups oats - ½ cup rolled oats and 1 cup quick oats (use gluten free if necessary)
  • ⅓ cup mini chocolate chips or chopped chocolate chunks*, plus more for studding, if desired
  • pinch of salt, optional but highly recommended for offsetting the sweetness
  • subheading: Optional Add-Ins:
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon ground flax seeds or ground chia seeds
  • 1 tablespoon melted coconut oil
  • note: Raisins or Dried Fruit (Cranberries) instead of or half with chocolate chips
