Spicy Roasted Sweet Potato and Black Bean Burrito Bowl with Chipotle Mayo
Ingredients

  • 1 small fresh mango, or roughly 1 cup frozen mango, chopped
  • ½ cup chopped fresh cilantro
  • half of a red onion, chopped
  • the juice of 1 to 2 limes

  • 1 cup canned corn
  • this spicy vegan chipotle mayo sauce, or your favorite hot sauce for topping
