Vegan Broccoli Cheddar Soup (No Cashews)
Ingredients
  • 2 Tablespoon Olive Oil
  • 1 Cup Onion diced (½ a medium sized onion)
  • 3 Cloves Garlic minced
  • 1 teaspoon Salt
  • ¼ teaspoon Pepper
  • ½ teaspoon Paprika
  • ½ teaspoon Dry Mustard
  • Pinch of Thyme
  • 1 Tablespoon Lemon Juice or Lime Juice
  • 2 Cups Cauliflower cut into florets
  • 4 Cups Potatoes cut into 1 inch cubes
  • 4 Cups Vegetable Broth
  • 1 Cup Carrots sliced to ¼" thin
  • 4 Cups Broccoli cut into florets
  • 15 ounce Coconut Milk full fat in the can
  • ¼ Cup Nutritional Yeast up to 6 tablespoon according to your taste
