Kim’s Instant Pot Sprouted Lentil Soup

Ingredients
  • 2 T coconut oil or butter
  • 1 onion, diced
  • 4 stalks celery, diced
  • 4 carrots, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth or bone broth
  • 2 cups water
  • 1 10-oz package sprouted lentils (about 1 ¾ cups)
  • 1 bay leaf
  • 1 tsp oregano
  • ½ tsp thyme
  • ½ tsp sea salt
  • ¼ tsp pepper
  • ⅛ tsp cayenne pepper
  • Sour cream for topping
Steps
  1. Sauté onions and celery in coconut oil for a few minutes to brown slightly.
  2. Add all other ingredients and stir.
  3. Set IP to Manual High for 4 minutes. NR for about 20 minutes.
Notes
  • If you use regular lentils, increase cooking time to 10 minutes. Sprouted lentils are “pre-cooked.”  If lentils are still firm, add a couple of minutes.
