Not too sweet, crispy peanut butter cookies.

Servings: 5 ½ dozen cookies

Ingredients
  • 1 C unsalted butter
  • 1 C creamy peanut butter
  • 1 C brown sugar
  • 1 C white sugar
  • 2 eggs, well beaten
  • 2½ C flour
  • 1 t. baking powder
  • 1½ t. baking soda
  • 1 t. salt
Steps
  1. Cream butter and peanut butter; add sugars a little at a time and beat well.
  2. Combine dry ingrdients.
  3. Add eggs and dry ingredients to creamed mixture, combining until there are no dry spots. Chill dough for a few hours.
  4. Shape dough into 1" balls and place on parchment lined baking sheet. Using a fork, dip in water and use it to press crosswise into cookies.
  5. Bake in 375° preheated oven for 10 to 12 minutes. Remove to wire rack and cool.
Notes
  • Also like these shaped around a chunk of semi-sweet chocolate or a few good quality chocolate chips before using a fork to criss-cross.
