InstantLoss Skinny Enchiladas

Ingredients
  • 1 15oz can Organic Tomato Sauce 1 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • ½ tsp Garlic Powder
  • ¼ tsp Dried Oregano
  • ¼ tsp Salt
  • Pinch of Cinnamon
  •  
  • Homemade Enchilada Sauce (above)
  • 4 to 6 Organic Corn Tortillas
  • 1 lb Ground Meat
  • Packet taco seasoning
  • 1.5 to 2 cups Organic Black Beans
  • 1 large Avocado, sliced
  • 6 oz Cheddar Cheese (optional)
Steps
  1. Cook and season ground beef
  2. Add first six ingredients to a bowl and whisk until combined. Set aside.
  3. Preheat oven to 350 degrees F.
  4. In an 8x8 begin making layers. First sauce, then a tortillas, ground meat, black beans, avocado, and sprinkle with a little bit of cheese. Repeat.
  5. Bake for 25 minutes, I like to switch the oven to broil for the last couple minutes to brown the cheese.
  6. Serve over a bed of lettuce with a sprinkling of tomato, cilantro and avocado!
