Copy Cat Ikea Swedish Meatballs
Servings: makes 46 meatballs
Ingredients
  • 1   pound ground beef
  • 1   pound  ground pork
  • 2   eggs
  • 1   cup milk (for dairy free use non dairy milk)
  • 1/2 cup onion, finely chopped
  • 3/4 cup breadcrumbs (or toasted panko, crushed)
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 dash allspice (optional)
  •  
  • Cream Sauce
  • 1 cup half-and-half (for dairy free combine equal amounts coconut cream and non dairy milk)
  • 2 cups low sodium beef broth
  • 1⁄2 teaspoon soy sauce
  • 4 tablespoons white flour
  • 4 tablespoons butter
  • 1/4 to 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  •  
  • HALF SAUCE RECIPE
  • 1/2 cup half and half coconut cream
  • 1 cup low sodium beef broth.  (for vegan use 1 teaspoon Bills Best Beaf seasoning)
  • 1/4 teaspoon soy sauce
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1/8 to 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Steps
  1. Preheat oven to 400.   Prepare baking sheet by placing a cake cooling rack over a baking sheet and spray with cooking spray; set aside.
  2. Fry the onion till golden in a couple of tablespoons of butter until onions are translucent.
  3. Add all other meatball ingredients in large bowl and set aside until onions are ready
  4. Once onions are done cool slightly and add to meat mixture.  Mix well,
  5. Shape the mixture into , moderate sized, round balls and bake on prepared baking sheet
  6. Bake at 400 for 30 to 45 minutes until meatballs are cooked through.
  7. Cream Sauce:.
  8. Melt butter in pan and add flour, whisk till golden brown and flour is cooked.
  9. Add Beef Stock and Cream until desired thickness.
  10. Season well with salt and pepper.
  11. Serve the meatballs with the sauce, freshly boiled yukon potatoes, and lingonberry jam.
