  • 400g (or one can) of drained, rinsed cooked chickpeas
  • 2 tbsp chopped sundried tomatoes
  • 4 finely sliced spring onions
  • 1 tbsp Dijon mustard
  • 2 tbsp vegan mayo (or you can use yoghurt)
  • 2 tbsp olive oil
  • 2 cloves crushed garlic
  • 1 tsp smoked paprika
  • ½ tsp salt, more to taste
  • Black pepper
  • 1 small handful of chopped coriander
