Slow Cooker Peach-Strawberry Crumble

Ingredients

  • 6 yellow peaches (1½ lb total), pitted, peeled, and cut into ½" thick slices
  • 1 cup (5 oz) hulled and quartered strawberries
  • ¼ cup raw honey, preferably local
  • 1 tbsp fresh orange juice
  • 2 tsp cornstarch

  • ¾ cup quick cooking oats (I like Bob's Red Mill Quick Gluten Free Oats)
  • ½ cupped chopped roasted almonds
  • ¼ cup lightly packed light brown sugar
  • 1 tbsp flour
  • ¼ tsp kosher salt
  • 3 tbsp unsalted butter
  • Frozen Yogurt or whipped cream, for serving (optional)
Steps
  1. Lightly coat the inside of a slow cooker with cooking spray
  2. In a large bowl, combine the peaches, strawberries, honey, and orange juice. Sprinkle with cornstarch. Transfer to slow cooker.
  3. In a medium bowl, using a fork, combine the oats, almonds, brown sugar, flour, salt, and butter. Sprinkle over the fruit.
  4. Cover and cook on low until the fruit is tender, about 3 hours.
  5. To serve scoop the cobbler out into 8 bowls and top with frozen yogurt or whipped cream if desired.
