Easy Chicken Liver Pate
Ingredients
  • 1 pound livers from pastured chickens
  • 2 tablespoons butter, lard or bacon fat
  • ½ cup cognac
  • ½ cup homemade beef or chicken stock
  • 1 clove garlic, crushed
  • 1 teaspoon dried green peppercorns, crushed
  • ¼ teaspoon dried rosemary, crushed
  • ½ teaspoon dry mustard
  • ½ teaspoon dried dill
  • 3 to 4 tablespoons softened butter
  • unrefined salt to taste
