Curry Chicken with Potato and Spinach
Ingredients
  • 3 lbs chicken (legs with back) cut into pieces
  • 3 tablespoon olive oil
  • 6 cloves garlic (smashed)
  • ½ teaspoon black pepper
  • ½ tablespoon Cumin (geera) seeds
  • 1 teaspoon Anchar Masala
  • ¾ tablespoonsalt (adjust)
  • ½ medium onion (diced)
  • 1 Scotch Bonnet Peppers (chopped)
  • 1 ½ tablespoon curry powder
  • 2 tablespoon Caribbean Green Seasoning
  • ½ cup water for cooking out the curry
  • 4 large Potato (cut into ¼ s)
  • 2 cups water to cook the chicken
  • ¼ lb Baby Spinach (rough chopped)

I used an entire Scotch Bonnet pepper in this recipe, but it’s optional or use as much as you can handle. Do remember to wash your hands with soap and water immediately after handling such fiery peppers.
