This turns out surprisingly well, considering it is only 1 egg and 1 banana.

Servings: 11 tiny pancakes!

Servings: 11 tiny pancakes!
Ingredients
  • 1 banana
  • 1 egg
  • Cinnamon (optional, but recommended)
  • Butter (for heating)
Steps
  1. Place peeled banana in a bowl. Roughly mash with a fork.
  2. Crack egg into bowl with the banana. Mix well with the fork, until your "batter" is relatively smooth (small bits of banana are okay, and up to your preferences).
  3. If adding cinnamon, add and mix well.
  4. Add butter to a pan, and heat on medium-low.
  5. With a spoon, add medallion-sized drops of batter to the warm skillet. Heat until golden brown on both sides. You can tell when the first side is ready when the pancake is easy to flip.
  6. Serve warm and enjoy!
