Chicken Marinara with Broccoli

Ingredients
  • 1.5 to 2 lb boneless chicken breast cut into approx 1” pieces
  • 1 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 16oz box of penne pasta
  • 4 cups chicken broth
  • 1 jar marinara sauce
  • 1 12oz bag steamable broccoli
  • 2 tsp Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp pepper
  • Fresh grated Parmesan cheese
Steps
  1. Turn Instant Pot to sauté (high). Once it reads HOT, add olive oil and chicken. Sauté chicken for approx 2 to 3 mins until no longer pink on the outside. Add minced garlic and sauté another 1 to 2 mins.
  2. Deglaze the pot with a little of the chicken broth making sure nothing is stuck to bottom.
  3. Hit cancel and add remainder of chicken broth to pot.
  4. Add penne noodles making sure they are pushed down into the liquid. Add sauce on top and seasonings. DO NOT STIR.
  5. Close lid and seal. Cook on high pressure for 5 mins.
  6. While pasta is cooking, steam broccoli in microwave per instructions on the package (I actually used my 3qt IP and cooked on high pressure for 0 mins and quick released when finished).
  7. Once pasta is finished cooking, do a quick release and open lid. Stir well. Add streamed broccoli and stir just until mixed.
  8. Garnish servings with fresh grated Parmesan cheese.
