Mexican Ham and Bean Soup

  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 3 bay leaves
  • 3 garlic cloves, crushed
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 chipotle chile (or dried ancho or pasilla chile)
  • ½ cup (2 ounces) shredded Manchego cheese or Monterey Jack cheese
  • ½ cup minced fresh cilantro
