Lemon Bread
A hand-me down recipe from my mom that makes the best lemon bread I’ve ever tasted that wasn’t Starbucks lemon loaf!

Servings: 1 loaf of bread in an 8 ½ x 4 ½ loaf pan or 3 mini loaves

Ingredients
  • 1 cup sugar
  •  
  • ½ cup unsalted butter
  •  
  • 1 Tbsp grated lemon rind
  •  
  • 2 eggs
  •  
  • 1 ½ cup flour
  •  
  • 1 tsp baking powder
  •  
  • ½ tsp salt
  •  
  • ½ cup milk
  •  
  • subheading: GLAZE:
  • ½ cup Confectioners sugar
  •  
  • 1 lemon juiced
Steps
  1. Heat oven to 350°
  2. Cream butter and sugar
  3. Add eggs and lemon rind
  4. Combine flour, baking powder and salt. Mix together and add into mixer
  5. Add milk
  6. Whip for 2 minutes
  7. Grease loaf pan and pour in batter.
  8. Bake for 1 hour.
  9. Prick loaf with a fork to create holes and then drizzle glaze over the loaf immediately upon removal from oven.
