Green fruit leather /cracker

Servings: 3 large trays in dehydrator
Ingredients
  • 1 medium zucchini
  • 1 small/medium  Persian cucumber
  • 1 24oz jar organic unsweetened applesauce
  • A large handful or baby spinach
  • 1 small banana
  • A dash of cinnamon
  • ½ dropper liquid organic stevia
Steps
  1. Blend all in a high speed blender like a blendtec or vitamin. You will have to pulse a few times to incorporate before speeding it up. Put the applesauce in the blender first.
  2. Separate mixture between three dehydrator trays lined with paraflex sheets or parchment paper(parasheets work best. )
  3. Spread mixture using an offset metal spatula. Spread a this layer so that you cannot see the tray underneath, not much thicker though.
  4. If you would like to make the mixture in to crunchy fruit/veg crackers add I cup of finely shredded unsweetened organic dried coconut to the mix per tray(about 2 ½ cups -3 cups depending on preference)
  5. Set dehydrator to 125 to 135, set for about 4 hours. Every hour rotate the trays so that they dry faster and more evenly.
  6. Fruit rolls are done when they are not wet underneath and are still very pliable.
  7. Fruit crackers are done when they are crunchy and able to crack apart. Usually a few hours past the fruit leathers.
