Roasted squash and eggplant
Ingredients
  • ½ butternut squash , cut into cubes (I bought mine pre-cubed)
  • 1 eggplant, cut into cubes
  • 1 medium red onion, sliced
  • 2 tbsp olive oil
  • ½ tsp cinnamon
  • Salt & pepper to taste
  • 1 cup cooked lentils (cook according to package)
  • Chopped parsley (garnish)
  • Feta Cheese (garnish)
  • Arugula
