Easy Veggie Muffins (With Broccoli and Carrots!)
Emma's notes: I didn't have any carrots on hand so instead I used a mixed vegetables which included broccoli cauliflower green and yellow squash and carrots and I microwaved that together and then chopped it in the food processor. I then squeezed out any excess liquid. I didn't have any cornmeal so instead I post some of my course polenta meal. I added garlic powder, onion powder, and chopped fresh scallions.
Ingredients
  • 1 cup grated carrot
  • 1 cup finely chopped broccoli (top parts of the florets only, no stems)
  • 1 cup shredded cheddar cheese
  • 1½ cups milk
  • ¼ cup melted butter (or neutral oil like canola)
  • 2 eggs (lightly beaten)
  • 1 cup cornmeal
  • 1 cup whole-wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
