Vietnamese Noodle Salad
Ingredients
  • 500 g beef (1.1 lb), (eg. rump steak) finely sliced against the grain
  • 1 tbsp oyster sauce
  • 1 tbsp garlic minced
  • 1 tbsp lemongrass minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp chicken stock (or sugar)
  • 3 tbsp vegetable oil
  • 500 g dried rice vermicelli (1.1 lb)
  • ½ cup pickled daikon and carrots (do chua)
  • 4 tbsp crispy fried shallot
  • 4 tbsp roasted peanuts crushed
  • Fresh greens: lettuce, mint, perilla, cilantro etc. washed and roughly chopped
  • 200 g bean sprouts (7 oz)
  • 1 cucumber , julienned
