Charred Squid with Tuna Mayonnaise
Ingredients
  • 600 g cleaned squid tubes and tentacles (ask your fishmonger to do this)
  • 2 tablespoons melted coconut oil or good-quality animal fat
  • sea salt and freshly ground black pepper
  • Tuna mayonnaise
  • 100 g jarred tuna in brine or olive oil, drained (or use sardines, mackerel or eel)
  • 120 g Mayonnaise
  • 1 teaspoon lemon juice
  • Garlic and caper sauce
  • 3 tablespoons coconut oil
  • 4 garlic cloves, finely chopped
  • 1 teaspoon finely chopped thyme leaves
  • 3 tablespoons salted baby capers, rinsed well and patted dry
  • 2 tablespoons lemon juice
  • 80 ml (⅓ cup) olive oil, plus extra for drizzling
  • subheading: To serve:
  • 1 small handful of red vein sorrel or
  • flat-leaf parsley leaves
  • 1 small handful of dill fronds
