Cheddar Bay Biscuit Chicken Cobbler
Ingredients
  • 2 tablespoons unsalted butter, melted
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1oz (by weight) of flour
  • 2 small baking potatoes, peeled and diced (one if they’re big)
  • 4 cups shredded rotisserie chicken
  • 1 (12 to 15 ounce) package frozen mixed vegetables
  • 1 teaspoon chopped fresh thyme
  • ¾ teaspoon freshly ground black pepper
  • ¼ teaspoon kosher salt, or to taste
  • 1 (10.5oz) can condensed cream of chicken soup
  • 1 ½ cups chicken broth
  • ½ cup milk
  • 1 package cheddar biscuit mix (such as Red Lobster Cheddar Bay Biscuit Mix)
  • ¾c water (for biscuit mix)
  • ½c shredded sharp cheddar (for biscuit mix)
  • 4 Tbsp melted butter and biscuit seasoning packet (to mix and brush over finished casserole)
