Hetty Lui Mckinnon's Lentil Bolognaise Ragu
Ingredients
  • ¼ cup extra virgin olive oil
  • 2 large brown onions, diced
  • 3 sticks celery, diced
  • 3 carrots, diced
  • sea salt and black pepper
  • 1 teaspoon white sugar
  • 4 fat cloves garlic, finely chopped
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup (210g) dried green lentils
  • 1 large can (800g) diced tomatoes
  • 3 to 4 cups (750ml-1000ml) vegetable stock
  • 1 tablespoon red wine vinegar
  • subheading: To serve:
  • 500g pasta such as spaghetti, linguine or penne
  • Grated vegan parmesan cheese
  • Basil leaves
