Tender and easy to shred. I wanted more heat so I used canned tomatoes with chili peppers.
Ingredients
  • 14.5 ounces Fire Roasted Tomatoes
  • 1 cup chicken stock
  • ½ onion I used a sweet onion
  • 1 jalapeno pepper
  • 2 tsp sea salt fine grind
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 bunch cilantro stems only for this recipe
  • 1½ lbs chicken breasts (boneless, skinless) frozen or thawed
