Strawberry-Rhubarb Galette with Buckwheat Crust

  • ½ vanilla bean, halved lengthwise, or ½ tsp. vanilla extract
  • 1 large egg, beaten to blend
  • Whipped cream, ice cream, or crème fraîche (for serving)
