  • 1.5 lbs boneless chicken breast, cut into cubes (can also use thighs or tenders)
  • 2 cups baby potatoes
  • 2 cups carrots, baby or large carrots cut into chunks
  • 4 cups broccoli
  • 2 tablespoons olive oil
  • 1⁄2 cup grated parmesan cheese
  • 1 packet Hidden Valley ranch dip mix (any ranch seasoning, about 4 tablespoons)
  • Salt and pepper to taste
