Ingredients
  • 3 tablespoons olive oil
  • 1 large fennel bulb, thinly sliced (optional)
  • 1 medium carrot, chopped
  • 3 large shallots, or one large onion, chopped
  • Juice of one lemon
  • 2 teaspoons salt
  • 2 to 3 garlic cloves, minced
  • ½ teaspoon dried crushed red pepper flakes, or black pepper
  • 1 (28-ounce) can diced tomatoes in juice
  • 1 ½ cups dry white wine
  • 4 to 5 cups of water
  • 2 bay leaves
  • 1 doz. clams, or mussels, scrubbed
  • 1 lb. uncooked jumbo shrimp, peeled and deveined
  • 2 ½ lbs assorted firm-fleshed fish, halibut, cod, scallops, or whatever is available; cut into 2-inch chunks
