Ingredients
  • There will be a new IP user soon! My daughter flew in for a short visit and we made Cuban black beans! Can be scary for a first-timer so I wanted to inroduce her to PCing hands-on. Turned out so yummy. Rich, rich broth. I like my beans very soft so when chart said 12 to 25 minutes I cooked for 40. She's a convert! 2 lb dried, rinsed, picked over black beans, jumbo sweet onion finely sliced on mandolin, Braggs organic apple cider, 3 crushed garlic cloves, cumin, chili powder. We guesstimated. Next time doubling spices, onions, garlic, and cider. Filled with water to the max line. Next will use broth. Love how you can wing it! Beans absorbed most of the broth by the next day. Served with chopped raw onion, halved grape tomatoes, and some Pomi tomato liquid, and with ear corn on the side as a treat. We didn't soak the beans. Would probably halve the cooking time if soaked. Yum!!
